.5 oz. raspberry simple syrup

Sparking wine or champagne (brut)

Lemon juice, fresh

Mixed seasonal berries, for garnish

Heat one cup filtered water with one cup sugar and bring to a rolling boil. Muddle raspberries in a separate cup. Take simple syrup off heat, add in the muddle raspberries, and stir on heat for 2-3 minutes. Strain mixture and remove seeds. Pour raspberry simple syrup into a double old fashioned glass filled two-thirds full with pebble-size ice. Add champagne to cup to fill. Add a splash (or more to taste) of fresh lemon juice and stir. Garnish with berries and serve. Cheers!
